Sweet potato crepes with homemade jam
1kg of sweet potato from Aljezur; 4 eggs; 100ml of whole milk; 50g of butter; Salt and pepper to taste; Ghee Butter (clarified) qb
For the jam:
1.5kg of ripe tomatoes; 500g sugar; 2 vanilla pods; 2dl white wine
